This pan, made from steel and coated with enamel, is the ideal metal for cooking the perfect paella. This type of pan has been used in Spain for decades.
The enamel protects the pan from rusting and does not require seasoning.
The large cooking surface allows the rice to cook evenly and to maximize flavor.
The enamel steel pan also helps in developing the socarrat, caramelized rice that sticks to the bottom of the pan. Myson's Enameled Steel Paella Pans have a solid carbon steel construction like the polished steel pans, that are then coated with a durable enamel which does not require pre-seasoning and offers easy clean-up. The carbon steel construction promotes the development of the the socarrat, caramelized rice that sticks to the bottom of the pan. The wide base and shallow sides help with the even cooking of the rice, flavor development and absorbstion. These pans are meant to be used on gas stoves, over open flame, or in the oven. They are not recommended for use on electric or smoothtop ranges.

The pan bottom is dimpled in order to spread heat evenly. You can use this paella pan either on top of the stove or on an outdoor grill. As you use your steel paella pan it will become seasoned: changing color and absorbing more flavors as you continue to cook with it. After each use, treat the pan as you would any steel or cast iron pan: wash it by hand, then season it with a light film of oil to retard rust.
